Our Demi Chef de Partie Role:

We’re looking for a passionate
Chef de Partie to support our Sous and Junior Sous Chefs at The Brackenrigg
Inn. You’ll bring culinary precision, creativity, and meticulous
attention to detail to the team, whilst ensuring high standards and consistent
quality in daily food preparation.

Collaborating closely with the
greater Kitchen team, you'll assist in creating innovative menus, supporting
daily operations, and ensuing top-notch food quality. You’ll also be friendly,
hardworking, and have excellent time-keeping skills that enable you to
prioritize under pressure. With your culinary finesse and unwavering
commitment, you'll be an integral part of delivering extraordinary dining
experiences to our guests. You will also handle purchase orders and ensure that
items arriving without authorization are not received.

Please note, this is a full-time
role working 45 hours per week. 

As our Demi Chef de Partie
you’ll be:


  • Maintaining excellent standards of
    department appearance, with an emphasis on cleanliness and good hygiene
    within the kitchen area(s).
  • Taking care of daily food preparation and
    duties, as assigned by superiors.
  • Coordinating daily tasks with the Sous
    and Junior Chef.
  • Preparing for the day’s business in
    accordance with associated needs.
  • Estimating daily production needs and
    checking the quality of raw and cooked food products to ensure that
    hygiene standards are met.
  • Ensuring that the production, preparation
    and presentation of food are of the highest quality at all times.
  • Demonstrating and maintaining awareness
    of all menu items, their recipes, and methods of production and
    presentation standards.
  • Operating and maintaining all
    departmental equipment and reporting any evidence of malfunction.
  • Periodically checking expiry dates and
    ensuring proper storage of food items as per food hygiene law.
  • Demonstrating compliance with
    instructions given by your immediate supervisor.
  • Maintaining knowledge of all standard
    procedures and policies pertaining to food preparation, receiving, storage
    and sanitation.
  • Following good preservation standards for
    the proper handling of all food products at the correct temperature.
  • Assisting colleagues in stocking up when
    necessary.
  • Responsible for undertaking a variety of
    tasks during the preparation, storage, and service of food.
  • Supporting the smooth running of all
    aspects of the kitchen and back of house areas.
  • Reporting directly to the Head Chef,
    Senior Sous Chef, and Junior Sous Chefs.
  • Responsible for the Commis chefs and
    setting a positive example within the Kitchen environment.
  • Completing daily Risk Proof
    checks.    
  • Advocating for our shared
    responsibility to look after both our teams and our planet, and a
    willingness to learn about our journey towards a BCorp accreditation.
  • Eager to get involved with BCorp related
    initiatives and workshops.

The skills you’ll be
