Job Description

The main responsibility is to supervise the Chinese production kitchen and support the Executive Chefs in our unit. You will have a good knowledge of specific ingredients, cooking methods and act as a team leader to motivate the team. You will be responsible for overseeing, training, evaluating, and counselling the team ensuring compliance with company standards.

  • Working closely with the Executive Chef team to ensure that consistent quality products in the Chinese kitchen are produced following all DO & CO requirements.
  • Day to day managing and supporting of the Chinese Kitchen team.
  • To maintain high quality standards in staff performance, Chinese food production and presentation service procedures.
  • To Ensure all kitchen appliances are kept clean and are well maintained and report any issues to the Head Chef.
  • Planning production to the daily schedule and ensuring the exceptional quality is maintained at its highest level with maximum efficiency in accordance with DO & CO regulations as set by the Quality Assurance team.
  • Ensuring operations adhere to all SOP’s and ALL relevant Critical Control Points, Health and Safety, Food safety and all legal requirements.
  • Constantly performing quality control checks to ensure specifications are met on raw materials and finished products.
  • Ensure the correct cleaning and sanitising chemicals are used in compliance with EHO standards in the kitchen and take corrective action as required.

Qualifications

  • Passion for Authentic Chinese Cuisine: A genuine enthusiasm for cooking traditional Chinese dishes, with a focus on flavor and authenticity.
  • Extensive Knowledge of Chinese Culinary Techniques: Proficient in various cooking methods, including stir-frying, steaming, and braising, as well as an understanding of regional variations within Chinese cuisine.
  • Commitment to Quality Ingredients: Strong passion for using fresh, high-quality ingredients to enhance flavor and presentation.
  • Ability to Thrive in Fast-Paced Environments: Proven capability to work efficiently under pressure while managing multiple orders and prioritizing tasks effectively.
  • Attention to Detail: Exceptional focus on maintaining consistency in food presentation and quality, ensuring that each dish meets high culinary standards.
  • Expert Knife Skills: Proficient in various cutting techniques and safe handling of raw fish and other ingredients.
  • Food Safety and Sanitation Knowledge: In-depth understanding of food safety regulations and best practices to ensure a safe and clean kitchen environment.
